Hood blowers usually run at several fixed speeds, set by switching the motor to different windings or by a board that drives it at different levels. A mechanical switch has a contact for each speed; an electronic hood uses a relay or a solid-state output on the board for each. When one of those contacts or outputs fails, the fan keeps only the speeds that still work. A motor with a burned winding can lose one speed too. Some behavior is by design: a heat sensor can push the fan to high when the canopy gets hot, a boost mode runs full power for a few minutes and then drops back, and some hoods remember the last speed after a power cut. A fan that runs on high and ignores the other settings may be one of those, or a board output stuck on.
