Vent-A-Hood fits a heat sensor called SensaSource to the two-speed Magic Lung blower on its red rocker switch. When that blower is set to LOW and the heat inside the canopy climbs past its limit, or flames reach the hood, the sensor pushes the blower to full power on its own and lets it drop back to LOW once the heat falls. A Vent-A-Hood has no display, so this change in sound is the only signal it gives.

Look at the burners first: if there is flame in a pan or reaching toward the hood, turn the burner off, slide a lid over the pan and leave it, never use water, and get out and call 911 if fire gets into the hood or a cabinet.
If it is only hard searing or several burners on high, leave the blower running; it should settle back to LOW a few minutes after the heat comes down.
To stop the fan early, move the red rocker to its middle OFF position once the pans are off the heat.
If the blower races on a cold hood, or will not leave full power after everything has cooled, book a visit so the sensor and the switch can be tested.

The code is gone and the blower pulls steam up on every speed again without a new part. If it returns this week, or the filter reminder keeps coming back right after a cleaning, mention it in the booking.

The jump to full power is not a motor about to fail, and it only concerns the two-speed blower on the red switch. The extra single-speed blower on a black switch is never run by SensaSource, so a black-switch blower that stops or races points somewhere else.
